2-3 chicken breasts, cooked and shredded
4 celery stalks, finely chopped
3/4 cup grapes, sliced in half
1/3 cup shelled salted pistachios, roughly chopped
1/3 cup mayonnaise
1/4 teaspoon salt
1/4 teaspoon pepper
Combine chicken, celery, grapes, pistachios, mayonnaise, salt & pepper. Stir well to coat and refrigerate until ready to serve. Serve over a few leaves of romaine lettuce.
